Byron Bay has world-famous café culture — and until now, not a single dedicated bagel shop. We thought that was a bit ridiculous. So we fixed it.

How it started

Locals were driving hours for a decent bagel

True story. Ask around the Northern Rivers and you'll hear it — people crossing half the region just to get their hands on a proper bagel. In a town famous for its cafés, that never sat right with us.

So Byron Baygels became Byron's first dedicated bagel café. A little spot on Jonson Street, a few blocks from the beach, doing one thing properly: real bagels, made by hand, every single morning.

Inside it's bright white walls, bold red signage and retro graphics — vintage boho, the Byron way. Grab a window seat, order a coffee, watch the town wander past.

How we bake

The old way. The only way.

Every bagel is made on-site each morning by our qualified baker, using the traditional technique. No shortcuts, no freezer bags.

Hand-rolled at dawn

Our baker is in before sunrise, rolling every ring by hand. That's why no two bagels look exactly alike — and why they all taste the same kind of great.

Boiled, then baked

The traditional technique. A quick bath gives that glossy, chewy crust; a hot oven does the rest. It's the difference between a bagel and bread with a hole in it.

Loaded with local

Straight from the oven to your order — stacked with Northern Rivers produce and good things from suppliers we trust. Fresh from first bite to last.

Grown up the road, not shipped from who-knows-where

Our avocado, tomato, spinach, rocket and mushrooms come from Northern Rivers growers. Our salmon, halloumi and cream cheese come from trusted Australian suppliers. Our coffee and matcha are ethically sourced — and everything leaves the counter in recyclable branded packaging.

Buying local isn't a marketing line for us. It's just how a Byron café should work.

Where we're headed

Today Jonson Street. Tomorrow, the coast.
